There are places that inspire, that fill the soul with light. Here at Castellaras, with a direct view from the terrace of the beautiful village of Fayence, a certain art of living takes shape. Hermance and Quentin Joplet are the second generation of a family tradition that has spanned thirty-seven years. A family deeply rooted in the spirit of warm hospitality and fine dining. The chef, a Belgian native of Namur in Wallonia, left his homeland over fifteen years ago to soak up the Provençal and Mediterranean sun. He cooks simply, using local ingredients. The recipes reflect this simplicity. The prawns, barely seared, are mixed with wild fennel flowers—which give them an aniseed flavor—and served on a bed of Provençal cocos beans, still firm to the bite. A tomato-and-basil sauce brightens the dish, while a few lightly pan-seared chorizo slices add a spicy kick. The saddle of Alpilles lamb, roasted and pink in the center, rests on a bundle of pélendron beans—those dwarf snow peas— accompanied by a beautiful, glossy meat jus, while we wait for the Reine-Claude soufflé, with a hint of mirabelle plum brandy, to make its grand entrance. The service is exceptionally friendly, under the watchful and attentive guidance of Hermance. The wine cellar offers the lightness of rosés, the indulgence of local whites, the power of whites from elsewhere, the suppleness of sun-kissed reds, and the depth of grand crus. Beautiful “Gourmandises” and “Découverte” menus featuring 4 and 6 courses at €80 and €115.
