In the heart of the village of Sauternes, across from the vineyards of Château Guiraud, Le Cercle is housed in an elegant stone building reminiscent of a country inn, with a terrace that opens wide onto the vineyards. At the helm, Yoann Amado now displays a clearly defined gastronomic ambition and creates cuisine deeply rooted in the Southwest, where the fundamentals of French cuisine are skillfully blended with Asian influences. The Sauternes region also serves as a unifying theme on the plate: Sauternes miso adds richness and depth to a surprising pineapple tomato dish scented with green shiso. The seafood course offers an immediate highlight with ginger-marinated yellowtail, bursting with freshness and enhanced by chilled salicornia milk, followed by a beautiful pikeperch fillet simmered in wine lees, served with shellfish, lettuce, and sorrel. The mastery of cooking techniques is evident throughout the meal and is particularly showcased in the second standout dish, one of the chef’s signature creations: grilled squab with grapevine shoots—rich and subtly smoky—served with a devil’s sauce and surprising ravioli made with melon and spring onions. Precise, generous, and consistent cuisine, served by a skilled team and supported by a well-stocked wine cellar, naturally focused on Bordeaux and Sauternes.
