Opposite the Château de Montmirail, Le Chandelier has revitalized an emblematic village address with a contemporary offering from young Théo Gourbeyre. Trained by the likes of Christian Etchebest, Jean Imbert and Guy Martin, the chef's seasonal cuisine is clear and precise, rooted in the region but modernized in terms of style and presentation. The deliberately limited menu - three starters, three main courses, three desserts - reflects this desire for freshness and mastery. Green asparagus, served with cream of spinach and celery, yellow wine emulsion and dried fruit, seduces with its balance of frankness and greed. The well-cooked salmon à l'unilatérale with peas, broad beans, pan-fried fennel and parsnip purée with lemon confirms the care taken with cooking and seasoning. The strawberry dessert with homemade fromage blanc and chestnut honey ice cream is fresh, precise and delicious. In the dining room, the chef himself takes care of service with a young, smiling and committed team, in a relaxed and contemporary atmosphere. The superb view of the château and the sincere focus on local producers contribute fully to the identity of this restaurant, which is already very popular in the Perche region of Sarthe.
