Green asparagus, served with cream of spinach and celery, yellow wine emulsion and dried fruit, seduces with its balance of frankness and greed. The well-cooked salmon à l'unilatérale with peas, broad beans, pan-fried fennel and parsnip purée with lemon confirms the care taken with cooking and seasoning. The strawberry dessert with homemade fromage blanc and chestnut honey ice cream is fresh, precise and delicious.
