In this beautiful village on the waterfront, in the heart of the Loire Valley vineyards, Le Chat is one of our favorite spots—a discreet, well-run establishment where the chalkboard menu features a most appetizing selection of bistronomic dishes. The chef is a true master of his craft, offering seasonal creations such as blood sausage terrine, snails, horseradish, and chestnut flakes; sea bass fillet; piquillo peppers stuffed with fennel compote, lemon, chorizo, cockles, and savory; lamb tripe with celery and toasted almonds, wild garlic, and crayfish; and a strawberry-rhubarb île flottante with pink pralines.
