The industrial size of the establishment, the ultra-touristy location on the Place de la Liberté, the large terrace, the naturally foreign clientele... Everything suggests a rather classic brasserie, and yet the address actually proves to be of a very serious standard, on the plate as well as in the glass, the welcome and the efficiency of the service. In fact, it's all explained by the fact that it's the home of Ludovic Alran, Jean-Paul Jeunet's former second-in-command! While the kitchens are indeed bistro-style, the chef's gastronomic past is evident in the detail and mastery of his dishes. We appreciate the beautifully executed starter of Bonvalot snails, turnips, white asparagus, yellow wine and mushroom emulsion; then the remarkable saddle of rabbit with savory, very well accompanied by cannelloni of zucchini with giblets, crispy polenta and artichoke barigoule purée; and finally the chocolate, mint and rhubarb dessert, all in balance. The cellar is also very well-stocked, with a wide selection of wines, particularly Jura. Impeccable service.
