Bruno Doucet has thus taken the reins of this legendary restaurant in the Palais-Royal, where Victor Hugo and Sarah Bernhardt, among others, once dined. It’s a revolution and a major event, even though the chef at La Régalade is perfectly suited to restoring the grandeur of the French bourgeois cuisine he cherishes—a style that fits perfectly within this historic setting. There’s no set menu, but an appetizing à la carte featuring Label Rouge shrimp tails, roasted and served warm with a Provençal mesclun salad refreshed with pink grapefruit, all accompanied by a tomato-tarragon sauce; a thick cut of sea bass with French-style peas, green asparagus tips, and sucrine lettuce scented with lemon thyme; and to finish, a refreshing Grand Marnier ice soufflé with an almond dacquoise infused with orange syrup. Admittedly, Bruno Doucet isn’t turning the Grand Véfour upside down, but he’s breathing new life into it. The wine list is classic, and the staff is young and enthusiastic.
