In one of the most beautiful villages along the Burgundy Wine Route, Romain Versino runs one of the finest stops along the way with this lovely 5-star hotel. The stately historic building houses a top-tier hotel and an equally inviting restaurant, focused on high-quality ingredients and contemporary pairings. The menu is appealing, and the dishes live up to expectations: green asparagus, quail eggs, and wild garlic; Arctic char, daikon, and watercress; veal loin, carrots, and pollen; and a dessert of rhubarb, jasmine, and almond. Excellent service.
