On the shores of the large pond in Saint-Estèphe, near Nontron, Chef Arnaud Sanchez welcomes you to this former mill to treat you to his authentic, regional cuisine—carefully prepared using local and seasonal ingredients—in a rustic and welcoming setting. You can choose from several set menus or à la carte options: for a starter, try the tartine made with small-spelt bread from the Fournil de Bogue bakery in Saint-Estèphe, truffle-infused ham, chopped tomatoes, Manchego cheese, smoked burrata, and tomato sorbet; or burrata made with Nontron goat cheese, summer truffle, a salad of peas, edamame, and pistachios; followed by a thick-cut trout fillet from Maison Bellet, a Duroc pork “presa” from Batallé, or half a duck breast served with a medley of carrots and onions, raisins, and ricotta, celery cream and foie gras sauce—not to mention the panna cotta with citrus crumble or the chocolate fondant with Saint-Estèphe red berries and speculoos.
