Located along one of France’s most scenic routes, the medieval town of Beaugency has been home since 2024 to Juliette Pinard and Alban Trifigny, a couple of restaurateurs passionate about the finest local products from the Loiret region, which they elevate to new heights. Both natives of the Orléans region and trained chefs, Juliette focused on pastry while Alban focused on cooking. Coming from a family of chefs, Juliette creates elaborate desserts in which she loves to incorporate vegetables and surprise the palate: a raspberry Bavarian cream surrounded by slices of candied rhubarb, a flat-leaf parsley ganache, and homemade raspberry ice cream. As for Alban, who says he was born with his feet in the Loire, he adores the delicate flavor of the white fish caught by the Loire’s last fisherman, Robert Guillot. On the summer menu is a reimagined vitello tonato made with veal, which he slices thinly and tops with a sauce made from white fish from the Loire, served with capers and pickles. This exquisite cuisine can be enjoyed in the charming dining room, the pleasant winter garden, or on the shaded terrace.
