A former chef at Bandol's Hôtel de l'Île rousse, Bruno Chastagnac also worked for the Pourcel brothers in Montpellier Opened three years ago with his wife Pascale, the restaurant has become one of the town's most sought-after, for its serious, well-prepared, elegantly classic seasonal cuisine. Its €43 menu is well-balanced: octopus lacquered with miso and soy, vegetable salad and lemon curry velvet, roasted scallops, citrus fruits with Voatsiperifery pepper and spiced cauliflower, guinea fowl cooked with smoked bacon and lentils, oat cream and hearty jus, spiced poached pear, tonka bean mascarpone and cocoa gavotte.
