In the heart of the Dordogne valley, the inn has been in the Chambon family since 1884, and is now in its fifth generation, with Stéphane in the kitchen and Mathieu in the dining room. The setting remains a major asset: the Ouysse bridge, the Château de Belcastel and the large terrace make every meal a suspended moment. Stéphane's cuisine skilfully navigates between the modern, like the asparagus served warm with citrus sabayon, and the timeless house dishes that are always on the menu: stuffed pig's trotters, roasted langoustine tails. The beef striploin with its wine sauce, and the dessert of granny smith and kalamansi, testify to the chef's mastery of both cooking and taste balance. Mathieu leads a young, professional team, with a particularly sharp eye for sommelier skills.
