The charming and down-to-earth Vivien Durand runs his establishment like a prince—without any trace of despotism, but rather by closely involving his teams in the smooth operation of this historic venue. The atmosphere is both very chic and relaxed—free from constraints and worries—and the dining experience unfolds in the most pleasant and seamless way possible. Unfortunately, the menus are presented blind, which prevents you from getting your mouth watering and, above all, from making a choice; yet the dishes are always enticing, drawing you into his joyful and sincere vision of cuisine—thanks in part to the special relationships he maintains with producers throughout the region, all the way to the Basque Country. An extensive wine cellar with 500 selections, featuring wines from all regions—not just Bordeaux—and the sommelier’s expert recommendations.
