Just off the highway near Tournus, on the road to Brancion, Florian Giraud runs this dignified and respectable restaurant, with its understated yet tasteful decor—polished stone floors, wooden furniture, clean lines, and comfortable seating—a place where the cuisine is equally refined. The 2010 Young Talent award winner stays the course, offering modern and well-executed dishes: Jura trout in mousseline, green asparagus, egg yolk coulis, and wild garlic; a selection of fresh-caught fish grilled à la plancha, with a sauce vierge featuring toasted hemp seeds and seasonal vegetables; a Quintard pigeon with voatsiperifery pepper and white asparagus au gratin; and marinated strawberries, Viennese biscuit, and strawberry-mint sorbet. Good service.
