In the dining room, Tom brings the grand rituals of French dining to life through carving at the guéridon, flambéing, and filleting fish. These gestures all contribute to the experience of the fine restaurants of yesteryear. In the kitchen, Alexandre draws on the classic French repertoire, infusing it with a distinct Alsatian flair. His signature dishes include a Charolais ribeye flambéed in the dining room, traditional sauerkraut, stuffed cabbage, duck served on a wooden platter with boulangère potatoes, and a rum baba baked in a langhopf. Trained in renowned establishments, the two partners champion a traditional, generous, and meticulous style of cooking. The wine cellar houses over 300 selections, with a special focus on Alsace. As for the decor, antique furniture, vintage frames, silverware, and Alsatian porcelain combine to create an elegant and warm atmosphere.
