On the outskirts of Alès, Sébastien Rath, well supported by his wife Gwladys who livens up the service, reveals his creative universe, firmly rooted in the Cévennes region. From his signature dish - the remarkably revisited pastis-cacahuète - to the daurade du Grau-du-Roi, arabica sauce and fish soup, zucchini flower stuffed with fish mousseline and coffee mayonnaise, or the barbecued duck breast accompanied by a superb meat jus, vegetable declension and cherry gel, we are delighted to perceive a truly committed cuisine, established to the rhythm of the seasons and arrivals. A fine wine list, intelligently thought out and served with invaluable advice.
