Laurent Peugeot has found a new playground here, which he quickly made his own, displaying remarkable ease. The chef reigns supreme in the kitchens of the 5-star hotel, bringing all his expertise from Les Jardins to bear and showcasing a Franco-Japanese cuisine true to his passions. The menu features marbled Burgundy foie gras with blackcurrant, gingerbread, and soy caramel; red seabream in a buckwheat crust with a mille-feuille of cabbage, fennel, and pink peppercorn broth; a Corton Patrice Sanchez pigeon, the breast served pink, thighs as croquettes, baby carrots, and sriracha; Wagyu beef with smoked potato purée and melt-in-your-mouth Vitelotte potatoes with herbs; and a dessert of Carotte des Sables with flower honey, Madagascar vanilla, and carrot-passion fruit sorbet.
