Since March 2026, Chef Florent Pietravalle has found a new playground at Château La Coste, putting his extensive experience working with Rabanel, Gagnaire, and in Avignon to good use. The 2022 “Grand de Demain” award winner has established his gourmet restaurant, Louison, here, as well as his bistro, Les Jardins, where diners can enjoy a beautiful view of the vineyards from a delightful terrace. Here, Provence is experienced in its purest form, with dishes meant for sharing that showcase the region’s must-try specialties, executed with undeniable technical skill. The pistou soup is beautifully reimagined with Sardinian fregola, and the tomato and burrata salad has depth, particularly thanks to the skillful use of vinegars. You’ll also find breaded veal cutlets with tomato-basil sauce, along with well-executed sides like cold ratatouille dressed with barrel-aged wine vinegar. The wine cellar is remarkable, featuring several hundred selections.
