The former chef of Les Bacchanales in Vence has made a new life for himself in Bigorre with his partner Anastasia, in this charming inn with its uncluttered style and closeness to nature. It's a lovely return to his roots for Christophe Dufau, who takes the time to celebrate the land and the seasons. His guesthouse is a peaceful retreat, with rooms and a yoga workshop. The fourteen-cover table offers an intimate experience based on local produce, with a fine seasonal menu at €65. Warm service.
