Philippe Maré's restaurant is one of the benchmarks of Palais cuisine, a large ship on the edge of the Place Royale, where society travels for business and special occasions. It's a beautiful room with a fireplace, leather seats and high ceilings, where the chef reproduces traditions: mi-cuit de foie gras au porto blanc, filet de daurade royale et crème d'artichauts en barigoule, tournedos de paleron de boeuf braisé au vin rouge façon Rossini, pressé de pommes à la manzana, crème mascarpone, vanille, pommes vertes.
