And that's four! After the Agitateurs gastronomic table, the offbeat neo-bourgeois, Pirouette, the country bohemian, Sous les Pins, at the Fondation Maeght, here is Magma, located opposite the group's historic addresses, the latest brilliant idea from the tandem, Juliette Busetto and Samuel Victori. The concept completes the duo's culinary constellation, taking their exploration of codes, influences and formats even further. Somewhere between a (fake) popular eatery, a chic neighborhood izakaya and a "nipponomical" table, Les Agitateurs' savoir-faire is there for all to see. Magma is a collision of Mediterranean and Asian cuisine, from Japan, China, Vietnam and Korea. You can pick and choose from a hybrid menu that may include starters or main courses, or in any case, plates that become whatever you want them to be when you eat them: raw scallops in kimchi salad, flame-grilled sardines in a lovage and parsley sauce, iodized with nori seaweed, pork ravioli in the spirit of a phô broth, the highly addictive karaage-style crispy chicken with smoked sesame mayonnaise, placed on its newspaper (Japanese, please) and in its colorful plastic Vietnamese fast-food dish, accompanied by a lightly polished and suave Japanese koshihikari rice, and finally the burnt duck and thigh egg rolls in a dish for two.. We finish with a creamy, crunchy crème brûlée with vanilla and miso. In the cellar, a dozen biodynamic wines from Hungary, Vesuvius, Etna and Greece take pride of place, while sakes from France and Japan are a must. Ember service and a view of the volcanic kitchen.
