A truly exceptional chef born in the Pyrenees who speaks of the Alpine region as if he’d always lived there. Benoît Vidal is, above all, a highly skilled artisan who has climbed the ranks to reach the highest echelons of fine dining—in both senses of the word—and who can now reap the rewards of his talent: Trama, Guérard, Marcon, before Château de Divonne and Mas des Herbes Blanches, and then Val d’Isère, where he delighted us for years at his Atelier d’Edmond. He thus leverages his special relationships with producers at this new restaurant, on the outskirts of town, already nestled in nature. The lunch menu is impressive; the “À l’onde des cimes” set menu is 100% fish, and the “Graines d’eau”—available in a vegetarian version—is undoubtedly the most intriguing signature dish, with its lakeside, mountain, herb-infused, and invigorating flavors: pike and zander with saffron and fennel, crayfish with “Têtes de Thé,” trout with carrots and hogweed, and farm-raised guinea fowl with artichokes and verbena form a delightful sequence, rounded out in the same spirit with seasonal fruits, hibiscus-infused polenta with raspberries, or “mondeuse” peaches with Chartreuse-flavored yogurt. The wine cellar is well-stocked with Savoie wines, covering the entire region’s vineyards and featuring many great classics.
