The cuisine can at times be a bit too showy, as exemplified by this tomato-themed appetizer—featuring confit beef heart, tartare, emulsion, gazpacho, and ketchup—where the sheer number of components somewhat disrupts the balance. When the chef streamlines his approach—as with the yellowtail and mussels—the dish becomes more cohesive and better showcases its potential. The filet mignon, served with three condiments (meat jus with black garlic, mustard praline, and dark beer sabayon), demonstrates a true appreciation for flavor. The apricot-based dessert rounds out the meal on a light note. The wine list, which features a mix of French and international selections, is also reasonably priced.
