To Jean-Georges’ Market’s credit, having once been a pioneer, it hasn’t strayed too far from its original vision by succumbing to other trends. This eclectic fusion cuisine embraces its age—twenty-five years after its founding—and its Asian, Latin American, and Mediterranean influences: burrata with strawberry compote, crab rolls with tamarind sauce, chicken samosa, truffle pizza, spiced sea bream, sweet-and-sour broth, ricotta ravioli, and cheddar burger—all while staying true to its core offerings: the assorted “black plate,” the raw bar, and whole, naturally prepared cuts like salmon, turbot, and lamb chops.
