Remarkable Restaurant
Over the past decade or so, Hélène Darroze has established herself as one of the most recognized and beloved figures among the general public, who first discovered her, of course, on the show *Top Chef*. The heir to a long line of restaurateurs from the Landes region had, of course, already enjoyed a distinguished career before appearing on television, but it is now her presence, too, that draws people to Rue d’Assas, where she welcomes you with a broad, genuine smile from her upstairs kitchen. Far from those chefs—fortunately becoming fewer and fewer—who impose a secret menu on you, Hélène Darroze has also chosen transparency and generosity, detailing each dish on her beautiful menu—available as a five- or eight-course meal—across several lines. The Southwest is obviously well represented on this menu (one doesn’t so easily deny one’s origins), but it’s always infused with a delightful fusion of exotic flavors: the unbeatable foie gras from the Landes region by Dupérier is confit with Timut peppercorns and served with thin slices of “peau de crapaud” melon, fennel marinated in verjus, and a soft, slightly warm brioche studded with fennel seeds; the line-caught hake (from Saint-Jean-de-Luz) is barely cooked in duck fat to preserve its pristine whiteness, and enhanced with guindillas, Cantabrian anchovies, lovage, and an addictive Koskera-style sauce—all leading up to the superb Rouen duck, cooked until just pink and then flambéed with Capucin liqueur. The meat is magnificent—tender, full of character—and is served with ravioli filled with yellow beet, red plum, candied ginger, and green shiso—a skillful combination that perfectly balances the duck’s rich, meaty flavor. It would be impossible to conclude the meal without the baba (for a small extra charge…) soaked in Darroze Armagnac (you’ll be invited to choose the vintage) and served with a generous dollop of rose geranium whipped cream, rose jam, and julienned rhubarb and rhubarb sorbet. Service is efficient but sometimes a bit too eager; the wine cellar is extensive, though somewhat haphazard.
