In the heart of the capital of the Dukes of Burgundy, Tomofumi Uchimura’s restaurant offers one of the finest dining experiences in the prefecture. It is a place of great elegance, with a clean, understated aesthetic that strikes the perfect balance between fine ingredients and minimalism. The chef’s precision and inspiration reflect his Japanese roots, resulting in regional cuisine of the highest caliber. The five-course menu reveals a keen understanding of Burgundian traditions, featuring beautifully balanced dishes centered on rabbit and langoustine, paired with chanterelle mushrooms, carrots, apricots, mustard, marigold, and pine nuts; and, of course, bluefin tuna with caviar and salmon roe, rice and nori, avocado, mango, ginger, shiso, balsamic vinegar, and wasabi. Next comes Aube trout prepared koulibiac-style, with trout roe, puff pastry, spinach, sorrel, button mushrooms, egg, ume, and yuzu; or Burgaud duck—fillet and thigh—served with polenta, corn, cherries, black garlic, tonka bean, parsley, and red wine. The desserts are equally impressive, featuring variations on strawberries and raspberries, or the combination of Arceau honey and Auxonne saffron. An excellent selection of Burgundy wines.
