The wine cellar, boasting a fine selection of French and international wines, perfectly complements the cuisine of new chef Emmanuel Perrot. His cuisine doesn’t seek to revolutionize the classics, but rather to make them truly indulgent. The calf’s head carpaccio immediately sets the tone, enhanced by a flavorful gribiche sauce, while chervil and red onion pickles add just the right touch of acidity; the grilled Breton cuttlefish pairs beautifully with candied peppers, a yellow tomato sauce à la Sète, basil, and turmeric aioli—a sunny and flavorful dish; To finish, it’s hard to resist the filo millefeuille—crisp and exquisitely delicate. The roasted apricots and savory-infused pastry cream make for a decadent, delicately flavored dessert. The staff is pleasant, and the sommelier knows every detail about the wines on the menu.
