Place de la Pucelle is the natural extension of the Vieux-Marché, in an even livelier area: Paul-Arthur Berlan has found a prime location here; his menu is cohesive and modern, and reservations are practically essential for every seating to enjoy a table inside or on the terrace. The menu changes with the seasons, but the focus is clearly on fresh, seasonal ingredients—local whenever possible—and contemporary ideas: Acquigny trout gravlax with cucumber and radishes, slow-cooked veal with French-style peas and Colonnata, and an apricot, honey, and rosemary dessert. With a young, dynamic staff and an interesting wine list, this bistro checks all the boxes for success.
