Trained in Naples, Romain masters the demanding art of Vera Pizza Napoletana. His patiently worked dough is fermented for 24 hours, before being baked at 480°C in a Sorrento brick oven. San Marzano tomatoes, creamy fior di latte, fragrant olive oil: each ingredient bears a PDO or PGI signature, a guarantee of absolute authenticity. Julia orchestrates the dining room with the same rigor and sincere hospitality. The sober, luminous décor, punctuated by the scent of cooking, evokes Italy without artifice.
