Having previously worked at Ithurria in Ainhoa, Anthony Guilhaume and Laura Duboscq have opened this pleasant canteen in the Arsenal district. The decor is in keeping with the times, with waxed concrete and light wood, and the cuisine is contemporary and well-crafted, available in two versions: €25 at lunchtime and €44 in the evening. The chef revisits classic recipes with great creativity: textured and inspired: sushi, mackerel, xipister, rice, avocado, wasabi and sesame mayo; gnocchi with wild garlic, tallegio, candied egg yolk and hazelnut; tournedos of Bigorre black pork, salsify, peanuts and pig jus, pithivier of beef fillet, truffle, foie gras and port jus, or moelleux chocolate, feuillantine, caramel and peanuts.
