Now known as Rebond, Maufoux has not changed its style or direction, focusing on a rather modern interpretation of the terroir and offering a well-curated menu for €40 for the entire meal: snails, asparagus with burrata, walnuts, and peas; chicken breast with morels and mashed potatoes; and a chocolate-bergamot tart with yogurt ice cream. The wine cellar boasts impressive depth, featuring wines from all regions at very attractive prices.
