At Regain, you can travel back in time while staying right in the heart of Lyon: the ’70s-style dining room and grandma’s tableware with its bluish floral patterns transport you far from modernity. That doesn’t stop Chef Benjamin Sanchez’s small plates from packing a big punch of flavor, with seasonal ingredients artfully combined—even if the service is a bit cold, not to say clumsy. Whether it’s the appetizers—such as Arctic char with caramelized carrots, delicately scented with kumquat and tagetes—or an endive that’s surprisingly mild despite the grapefruit, walnuts, and Roquefort, the techniques are masterfully executed. The same goes for the two-course main dishes: a Dombes duck with cabbage and scallops with Asian accents. The apple, Calvados, and orange baba finally arrives after a long meal, where even those with smaller appetites will be satisfied by the modest portions.
