A renowned stop on the Champagne Route, not far from Laon. Chef Jean-Yves Collier has been at the helm for many years, consistently celebrating classic, confident French cuisine. We love returning to this menu, which is full of warm memories of family meals and special occasions—where you can treat yourself to a pan-seared foie gras cutlet, with a sweet-and-sour raspberry sauce and honey-roasted potatoes; the turbot fillet with seafood and shellfish jus; a medallion of sweetbreads with morels, potato pancakes, and polenta; or a millefeuille baked to order and served warm with a raspberry coulis.
