On the Divatte levee, Le Clémence is back to life, in a setting as striking as ever, overlooking the Loire. The history of the place, intimately linked to Clémence Lefeuvre and her beurre blanc, is still present in the background, but has been reinterpreted by the chef. The plate takes a direct approach to the product. The starter of goat's cheese and beet plays on clear, legible balances. The pork belly dish is generous and melt-in-your-mouth, while the dessert explores a more intense world of chocolate, sesame and peanut, with a strong focus on textures. The wine selection accompanies the meal with clear, educational advice. In the dining room, commitment is constant and contributes to the dynamic service.
