The dishes showcase the chef’s talent and experience: top-quality ingredients, precision in cooking and plating, and ideas skillfully adapted to modern tastes… The gourmet menu features lobster claws and tails on a bed of pea and chive purée, celery cream, a salad of raw vegetables and candied peppers; a roasted turbot fillet cooked on the bone with green asparagus tips; a vegetable blanquette with clams and a creamy mussel jus; or a tournedos with pan-seared foie gras, carrot mousse, early-season vegetables and wild mushrooms, black truffle sauce, and Vitelotte potato chips.
