After gaining experience at prestigious hotels and restaurants in Italy, France, and around the world, he is now a member of the prestigious Italian association “Ambassador of Taste.” That’s a testament to how incredible his traditional Apulian cuisine is—reimagined, original, and creative, with a focus on fish and seafood. Pietro searches the market for the best fish, squid, clams, and scallops… and draws shellfish straight from his own aquarium. With these ingredients, he creates extraordinary dishes. Everything is homemade, from the pasta to the bread. Spaghetti with octopus ragù, oven-baked John Dory fillet, risotto with three types of shellfish, octopus prepared in various ways… it’s all mouthwatering!
