The futuristic-looking house near the Château du Couffour remains a unique sight and a major attraction for the region. In the kitchen, Aurélien Gransagne carries on the tradition established by Serge Vieira—a style of cooking that is far ahead of its time yet places the utmost trust in regional ingredients. The serenity that emanates from this space, along with the attentive and meticulous service, promise a sense of well-being that extends to the plate through well-crafted courses—such as grilled liche with stuffed zucchini blossoms and shiso broth, the pork loin served with a medley of Sucrine and lettuce with hyssop juice, and the fig and tonka bean dessert on a hazelnut dacquoise with fig and star anise sorbet—all part of a mid-range menu priced at 146 € that showcases the restaurant’s excellence, which continues to be run with the same energy and efficiency by Marie-Aude Vieira.
