There isn’t much talk about this restaurant—one of the best in the region today—but what is said is always just as glowing. Charles-Antoine Jouxtel and Charlotte Schwab have résumés that speak for themselves (Donckele and Bacquié, among others), and their experience shines through in these dishes of infinite precision—both technically masterful and visually impeccable. It’s an interpretation of the coastal and Norman terroir—deeply rooted in local traditions yet full of personality—featuring ingredients presented in their purest form alongside sophisticated presentations, such as a simple mackerel with pine-smoked pepper, grilled leek, and endive salad; followed by the very elegant dish of leaf-by-leaf dried pork with Colonnata bacon, raw and cooked fennel, spinach purée, and a full-bodied, briny sauce—easily worthy of three toques. The meal continues with a beautiful chicken in cream sauce served in various forms: roasted breast, caillette, paillasson potatoes, and truffle. Finally, the intensely vanilla-flavored dessert—gavotte, caramel, a cloud of cream, and vanilla ice cream—is also of a very high standard. As for the wine cellar and sommelier service, Charlotte Schwab lives up to her reputation with a varied and well-chosen selection, which she presents with expertise and enthusiasm.
