Located on the cliff above the Vallon des Auffes, Ippei Uemura’s restaurant offers a magnificent view of the sea and the horizon, setting the stage for the culinary journey ahead. The formal precision of the setting clearly reflects the chef’s Japanese origins, which become apparent the moment you step through the door beneath the noren—an essential element of Japanese dining. The space is minimalist, designed to focus attention on the plate, where the chef presents an elegant fusion of French and Japanese flavors, with meticulously plated dishes. The omakase menu showcases beautifully blended ideas: sashimi and borage flowers, nakaochi-style tuna tartare, nanban-style mackerel, braised beef with seasonal vegetables and pickle sorbet, charcoal-grilled amberjack with green asparagus from Provence, grilled lobster with Sainte-Baume honey emulsion, charcoal-grilled duck with ginger sauce, and grilled foie gras. The wine list is too limited.
