Perched on the hills above Colmar—a pleasant microclimate (Colmar is the city in France with the least rainfall)—at an elevation of 650 meters, this building, which once housed pilgrims, was taken over in 2019 by Céline and Mickaël Hertzmann. The villa now features 5 guest rooms (including 4 suites) and 3 vacation rentals that can accommodate a total of 25 guests, with a sauna and a swimming pool on the property. In the kitchen, the chef—who loves cooking at low temperatures—invites you to enjoy two menus: the Classic menu (chicken supreme with Riesling, Villa Rosa burger, 3 vegetarian dishes) and the Tasting menu, featuring foie gras, salmon, shrimp, veal, and lamb are cooked at low temperatures. Céline and Mickaël source fresh, local produce: the vegetables, cheeses, and French wines are organically grown, and some vegetables are grown right in their own garden. The absolutely stunning terrace overlooks the garden with its 35 varieties of roses and the refreshing pond. An intimate, peaceful, and timeless green oasis just a few minutes from Colmar.
