Winery presentation by Gault&Millau

Born into a family of winemakers, Maxime Binon founded his winery in Spoy in 2000. He produced his first vintage at the age of twenty-four, in 2003. His sister Cyrielle joined him in 2012. Located on the Côte des Bar, the 6.5 hectares of vineyards are planted on Kimmeridgian clay-limestone soils. The estate practices sustainable viticulture (Terra Vitis and HVE certifications) and does not use chemical herbicides. Pinot Noir accounts for 70% of the vineyard. The estate offers tours and walks through the vineyards, as well as two vacation rentals located about ten kilometers from the estate.
