A golden color and an evolving nose of dried fruit, honey, cookie and undergrowth aromas, with discreet toasty and woody nuances already indicating the years. On the palate, the bubbles are still present, supported by fine tension. The body is rich and silky. Aromas evolve towards ripe, stewed fruit, dominated by yellow fruit (dried apricot). A champagne of character and controlled evolution, with a fine balance between smoothness and freshness.

Claude Rigollot set up his business in 1970 near Bar-sur-Aube, with just a few acres of vines. He marketed his first bottles ten years later, in the 1980s. His son Emmanuel took over in 2009, after completing a BTS in technical sales at the Avize viticultural college and a long internship in the United States. The estate comprises almost 7 hectares of vines in Bergères and Baroville. Pinot noir is the predominant grape variety, complemented by 20% Chardonnay. The estate welcomes you by appointment to taste its wines in a cathedral tasting room.
