Exuberant, poached yellow fruit, a hint of tobacco and dry vegetal, and a honeyed finish reminiscent of chamomile and sweet clover. The Chardonnay is there and unfolds on the palate with great openness and pleasant volume. A lamb tagine with dried apricots would be the perfect accompaniment to this ratafia, served at 8°C.

Located in Aÿ, in the heart of the emblematic Pinot Noir terroir, Maison Collery is proud of its passion for this grape variety, crafting cuvées from Pinot Noir grapes grown in Champagne's finest Grands Crus. All champagnes are vinified on lees, either in foudres or stainless steel vats, and generally include 20% reserve wines, carefully stored in foudres. This method produces champagnes of great depth, ready to surprise and delight at every tasting. The House has also decided to develop its wine tourism activities, offering five guest rooms in the heart of an old 19th-century bourgeois building, and a gîte.
