Gault&Millau's review 2019

A great deal of finesse in this cuvée, which achieves the all-too-rare combination of evolution and preserved freshness. On the nose, notes of fresh citrus fruit and juicy pear mingle with aromas of lemon tart, brioche and dried fruit. On the palate, we find the tension of the great grape origins, the finesse of the Chardonnay and the drinkability of the vintage. A cuvée to be reserved for the finest dishes: noble fish or shellfish.

Née en 1966, Union Champagne est une coopérative de coopératives. Animées de valeurs communes, c'est désormais 15 caves coopératives champenoises qui se sont engagées collectivement pour faire naître les cuvées du champagne Saint-Gall. Plus de 2 300 vignerons travaillent environ 1 400 hectares, dont 800 en chardonnay. Le vignoble est entièrement planté sur des parcelles classées premiers et grands crus. Depuis 2012, Union Champagne adopte une approche responsable en travaillant en étroite collaboration avec ses vignerons partenaires, engagés dans une culture de la vigne plus respectueuse de l’environnement. C’est désormais plus de 50% du vignoble qui est certifié VDC et/ou HVE niveau 3.
