The color is beautiful, pinkish, with tender shades of salmon and copper. Fine bubbles form a creamy, colorful mousse. The finely fruity structure is dominated by cherry, raspberry and strawberry aromas, with a hint of licorice and marshmallow on aeration. The attack is supple and the wine offers good volume, with bubbles that cover the palate well. On the palate, the red fruit flavors are again present, barely marked by discreet bubbles that bring a little freshness but above all dimension to the whole. Try it with pan-fried salmon steak and raspberry jus.

Née en 1966, Union Champagne est une coopérative de coopératives. Animées de valeurs communes, c'est désormais 15 caves coopératives champenoises qui se sont engagées collectivement pour faire naître les cuvées du champagne Saint-Gall. Plus de 2 300 vignerons travaillent environ 1 400 hectares, dont 800 en chardonnay. Le vignoble est entièrement planté sur des parcelles classées premiers et grands crus. Depuis 2012, Union Champagne adopte une approche responsable en travaillant en étroite collaboration avec ses vignerons partenaires, engagés dans une culture de la vigne plus respectueuse de l’environnement. C’est désormais plus de 50% du vignoble qui est certifié VDC et/ou HVE niveau 3.
