White peach is combined with broom and candied yellow grapefruit to create this cuvée blanc de blancs. The palate is lively, unctuous, chalky and mineral. The infinite finish remains austere. Ideal as an aperitif or with sushi.

A&J Demière

This family estate, located in Fleury-la-Rivière on the right bank of the Marne since 1936, began marketing its own production in 1945. Audrey and Jérôme, the third generation, have been in charge of the estate since 1998, creating the A&J Demière brand in 2003. A new winery was built in 2015, and the estate also offers gîtes and chambres d'hôtes. The vineyard includes all three classic grape varieties, with a majority of pinot meunier (50%) and pinot noir (30%), the remaining 20% being chardonnay. The house combines traditional methods (barrel vinification, ageing in troglodyte cellars) with innovative ones (ovoid vats, solera, parcel-based cuvées).
