Founded in 2012 by Guillaume Janiaut-Rousseau, this young winery based in Chaux spans 1.5 hectares and produces a limited output of 5,000 to 6,000 bottles per year. The wines are predominantly red and span four appellations, including Morey-Saint-Denis and Gevrey-Chambertin. In the cellar, Guillaume keeps interventions to a minimum. His wines are neither fined nor filtered and are vinified exclusively with indigenous yeasts.
