While for many the word "caboche" means "head" or "brain," in Provençal it refers to the nails used to secure the shoes under a horse's hooves. Père Caboche was therefore a farrier, but also a winemaker. Over the centuries, only the vineyard has been preserved, under the Châteauneuf-du-Pape appellation. Most of the reds are made from a blend of Grenache, Syrah, and Mourvèdre, but one cuvée—Elisabeth Chambellan—stands out for its blend of 13 grape varieties. Côtes-du-Rhône and Vin de Pays round out a relatively small selection. Note that a tasting and retail cellar is located in the heart of the village of Châteauneuf-du-Pape, across from the town hall. It is open Tuesday through Saturday.
