There are professional winemakers, and then there are the Taillets: Éric, who has been at the helm of the estate since 1995, along with Dylan, now the operations manager, and Léna, the sales manager. Most of the wines produced from the 37 plots—totaling 6.11 hectares—are, of course, made from Meunier, but Chardonnay and Pinot Noir also play a role, either as single-varietal wines or in blends. Deeply committed to environmental stewardship, the Taillets now farm without herbicides or fertilizers and are planting hundreds of beech trees to promote biodiversity.
