This blanc de noirs was only drawn in 2013 and disgorged two years later. The foam seems quite dense. The nose, woody (sandalwood), also reveals aromas of citrus, exotic fruit and passion fruit. On the palate, floral and citrus-fruited, with fine bubbles and good volume on the attack. This 2004 vintage is a cut above the House's other 2004s. It would be an excellent match for scallops with ginger butter.

The Paulet domain bears the name of the grandfather Hubert who developed it in the 1930s. A family home for four generations whose 8 hectares are all located in the premier cru classified village of Rilly la Montagne. The soils are tilled to give the most beautiful expression of the vines that are more than 20 years old, and are renewed by massale selection.
