No less than 60% of grapes from the 2009 harvest, complemented by previous wines matured in solera, go into this reserve cuvée that lives up to its name. The nose concentrates maturity, vinosity and richness. On the palate, the champagne is caressing and full of finesse. The finish offers a balance of undergrowth freshness and chalky minerality. An organic approach would add an extra touch of soul to this cuvée, which has already been crafted according to the rules of the art. Best served with a veal chop with morels and jus réduit.

Jean-Bernard Bourgeois

The Bourgeois family cultivates 7 hectares of the three Champagne grape varieties to offer a wide range of wines. Their work is focused on respectful, virtuous viticulture. The estate has been HVE3 and VDC certified since 2021. Jérôme is in charge of all vineyard work, from pruning to harvesting. Céline, who has worked in various vineyards, is in charge of the wine and sales side. She is also a member of the local winegrowers' cooperative.
